My husband and I were lucky enough to have a day off together on friday! It was so nice! So we went out for breakfast before we were going to do the shopping for the party.
I had a fresh juce with carrot celery apple and ginger it was so good!!

I'm always trying to think of the healthier option.. and with Evie's 1st birthday it was a big challenge for me. Kids parties what do you automatically think? Lollies... fairy bread.. sausage rolls.. So i decided to have a picnic party. This limited the baked/deep fried foods and BBQ was the only appliance we had! My Nan home made some dips and we had celery carrot and jats to go with it. Lunch was sausages and salads. My mum made her very healthy zuchini slice, we BBQ sausages and had two different salads!
For dessert a fruit salad and dairy free cake!
Drinks we had Apple juice, water bottles, sugar free soft drinks and COKE! My husband gave me an anxiety attack when he put this in the trolley!
Another thing was the lollie bags.. i wanted to put boxes of yoghurt covered sultanas, novelty toys and fruit slices.. but was reminded that its a one time thing and parents would monitor their consumption.. So i ended up putting chocolates and toys in..
Made 50 so everyone got to take one home!
I ended up having a stomach bug the night before and was ridiculously sick! I wasnt game enough to eat at the party so i was on electrolite drink every 30 mins! It was such a shame i had made all this beautiful healthy food and got to have none of it! But everyone seemed to enjoy the food and hardly any was left over =)
Parties aside its always good to think up healthy recipes to keep it fresh! Here are some of my new ones! and some favourites!

My delicious apricot muesli slice!!
So easy to make! and a great snack!
Ingredients
3/4 cup Rolled oats
1/2 cup coconut shredded
sprinkle almond flakes
chopped dried apricots x 15
chopped pecan nuts x 15
1/2 cup Brown sugar
1 cup wholmeal flour
1 tsp baking powder
sprinkle cinnamon
3tbsp melted nutellex
(dairy free margerine)
May need more or less of the ingredients i kind of just guessed with the amounts..
Mix it all together and press it into a slice tin. Bake on 170.C for 25 mins
This can be frozen in portions or stored for a week

Baked fish!
This was barramundi! Simply cut a few lemon slices and grab some fresh herbs. Wrap it up in a foil parcel and bake on 180.C for 30 minutes turning half way. DELICIOUS!! Also a good BBQ alternative to meat =)Hope youre all finding your own ways to eat clean.. Substituting heavy carbs for veggies and salad!
Even just being aware of your portion sizes! Remember it all starts with your plate! If you have a small plate youre less likely to over eat! So dont pile up and drink lots of water! Happy eating =)
